Savory Root Vegetable and Lentil Bake

Ingredients
  • •1 cup brown or green lentils, rinsed
  • •4 cups vegetable broth or water
  • •1 tablespoon olive oil
  • •1 large onion, chopped
  • •2 cloves garlic, minced
  • •2 medium carrots, peeled and diced
  • •1 medium sweet potato, peeled and diced
  • •1 parsnip, peeled and diced (optional)
  • •1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • •1/2 teaspoon smoked paprika
  • •Salt and freshly ground black pepper to taste
  • •4 large eggs
  • •1/4 cup milk or cream
  • •2 tablespoons chopped fresh parsley, for garnish (optional)
Instructions
  1. 1Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish (around 9x13 inches or similar).
  2. 2In a medium pot, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until lentils are tender but still hold their shape. Drain any excess liquid and set aside.
  3. 3While the lentils cook, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  4. 4Stir in the minced garlic, diced carrots, sweet potato, and parsnip (if using). Cook for another 8-10 minutes, stirring occasionally, until the vegetables start to soften slightly. Add the dried thyme and smoked paprika, salt, and pepper, cooking for 1 more minute until fragrant.
  5. 5In a large bowl, combine the cooked lentils and the sautéed vegetable mixture. Mix well.
  6. 6In a separate small bowl, whisk together the eggs, milk or cream, a pinch of salt, and a grind of black pepper until well combined.
  7. 7Pour the egg mixture over the lentil and vegetable mixture in the large bowl, gently folding everything together to ensure the eggs are evenly distributed throughout the vegetables and lentils.
  8. 8Transfer the entire mixture to your prepared baking dish, spreading it evenly.
  9. 9Bake for 25-30 minutes, or until the bake is set and the top is lightly golden brown. A knife inserted into the center should come out clean.
