Sunshine Cloud Eggs with Roasted Garden Medley

Ingredients
  • •4 large eggs
  • •1 cup cherry tomatoes, halved
  • •1 medium bell pepper (any color), diced
  • •1 small zucchini, diced
  • •2 tablespoons olive oil
  • •1/2 teaspoon dried oregano
  • •1/4 teaspoon sweet paprika
  • •1/4 teaspoon garlic powder
  • •Salt to taste
  • •Black pepper to taste
  • •1 tablespoon fresh chives or parsley, chopped (for garnish)
Instructions
  1. 1Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2In a medium bowl, combine the halved cherry tomatoes, diced bell pepper, and diced zucchini. Drizzle with olive oil, oregano, paprika, garlic powder, salt, and black pepper. Toss gently to coat. Spread the vegetables evenly on one side of the prepared baking sheet.
  3. 3Carefully separate the egg whites from the yolks. Place the whites in a clean, dry bowl and the yolks into separate small bowls or directly onto the other side of the parchment paper (creating small indentations to keep them from rolling).
  4. 4Using an electric mixer, whisk the egg whites on high speed until stiff peaks form (they should hold their shape when you lift the whisk). Gently fold in a pinch of salt and pepper, and half of the chopped fresh chives or parsley into the whites.
  5. 5Spoon the whipped egg whites onto the baking sheet, creating four distinct 'clouds'. Use the back of the spoon to make a small well in the center of each cloud for the egg yolks.
  6. 6Place the baking sheet with both vegetables and egg white clouds into the preheated oven. Bake for 5-7 minutes, or until the egg whites are lightly golden and set.
  7. 7Carefully remove the baking sheet from the oven. Gently place an egg yolk into the well of each cloud. Return to the oven and bake for another 2-3 minutes, or until the yolks are warm and slightly runny (adjust timing to your preferred yolk consistency).
  8. 8Serve immediately, arranging the roasted garden medley alongside or underneath the fluffy cloud eggs. Garnish with the remaining fresh chives or parsley. Enjoy your healthy and vibrant meal!
