Sun-Kissed Vegetable and Chicken Gratin

Ingredients
  • •1 tbsp olive oil
  • •1 medium onion, finely chopped
  • •2 cloves garlic, minced
  • •500g ground chicken or turkey (or 2 cups cooked lentils for a vegetarian option)
  • •1 red bell pepper, diced
  • •1 zucchini, diced
  • •1 cup fresh spinach, roughly chopped
  • •400g can diced tomatoes, undrained
  • •1/2 cup chicken or vegetable broth
  • •1 tsp dried oregano
  • •Salt and freshly ground black pepper to taste
  • •3 large eggs
  • •1/4 cup milk or cream
  • •1/2 cup grated Parmesan cheese (divided)
  • •2 tbsp fresh parsley, chopped (for garnish, optional)
Instructions
  1. 1Preheat your oven to 190°C (375°F). Lightly grease a medium baking dish.
  2. 2Heat the olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. 3Add the ground chicken or turkey to the skillet, breaking it up with a spoon. Cook until it's no longer pink, draining any excess fat if necessary.
  4. 4Stir in the diced bell pepper and zucchini. Cook for about 5-7 minutes, until the vegetables start to soften.
  5. 5Add the diced tomatoes (undrained), broth, and dried oregano. Bring the mixture to a simmer, then reduce the heat and let it cook for 10 minutes, allowing the flavors to meld and the liquid to reduce slightly.
  6. 6Stir in the fresh spinach until it wilts into the mixture. Season generously with salt and pepper.
  7. 7Transfer the cooked chicken and vegetable mixture into your prepared baking dish, spreading it evenly.
  8. 8In a separate bowl, whisk together the eggs, milk or cream, and half of the grated Parmesan cheese. Season with a pinch of salt and pepper.
  9. 9Pour the egg mixture evenly over the vegetables in the baking dish. Sprinkle the remaining Parmesan cheese over the top.
  10. 10Bake for 25-30 minutes, or until the egg topping is set and golden brown. Let it rest for a few minutes before serving. Garnish with fresh parsley if desired.
