Sun-Kissed Vegetable and Chicken Gratin

Ingredients
- •1 tbsp olive oil
- •1 medium onion, finely chopped
- •2 cloves garlic, minced
- •500g ground chicken or turkey (or 2 cups cooked lentils for a vegetarian option)
- •1 red bell pepper, diced
- •1 zucchini, diced
- •1 cup fresh spinach, roughly chopped
- •400g can diced tomatoes, undrained
- •1/2 cup chicken or vegetable broth
- •1 tsp dried oregano
- •Salt and freshly ground black pepper to taste
- •3 large eggs
- •1/4 cup milk or cream
- •1/2 cup grated Parmesan cheese (divided)
- •2 tbsp fresh parsley, chopped (for garnish, optional)
Instructions
- 1Preheat your oven to 190°C (375°F). Lightly grease a medium baking dish.
- 2Heat the olive oil in a large skillet or pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- 3Add the ground chicken or turkey to the skillet, breaking it up with a spoon. Cook until it's no longer pink, draining any excess fat if necessary.
- 4Stir in the diced bell pepper and zucchini. Cook for about 5-7 minutes, until the vegetables start to soften.
- 5Add the diced tomatoes (undrained), broth, and dried oregano. Bring the mixture to a simmer, then reduce the heat and let it cook for 10 minutes, allowing the flavors to meld and the liquid to reduce slightly.
- 6Stir in the fresh spinach until it wilts into the mixture. Season generously with salt and pepper.
- 7Transfer the cooked chicken and vegetable mixture into your prepared baking dish, spreading it evenly.
- 8In a separate bowl, whisk together the eggs, milk or cream, and half of the grated Parmesan cheese. Season with a pinch of salt and pepper.
- 9Pour the egg mixture evenly over the vegetables in the baking dish. Sprinkle the remaining Parmesan cheese over the top.
- 10Bake for 25-30 minutes, or until the egg topping is set and golden brown. Let it rest for a few minutes before serving. Garnish with fresh parsley if desired.
